AbstractPaphia undulata was used to prepare low-molecular-mass peptides by enzyme autolysis. The optimum condition for autolysis was studied to reach a maximum yield of peptides. Results showed that the yield of low-molecular-mass peptides was 4.33% and 78.57% of the total protein can be recovered under the optimized condition: pH=6.5, temperature=45 degrees C, reaction time=4h, ratio of starting material and water=1:3 and the enzyme dosage was 1374.0U/g.
